Regardless, that means “gumbo weather” is here and we can cook one of our favorite dishes! Gumbo is a quintessential Cajun dish (though some believe it had its origins in Africa). Gumbo is a vital part of Cajun culture and has been enjoyed by people in south Louisiana for nearly 300 years.

You can put just about any meat or seafood in gumbo – shrimp, crawfish, oysters, chicken, duck, beef, venison, smoked sausage and much more.
