Every autumn in south Louisiana, people can’t wait for the first cold front to come through (more often it’s just a “cool” front). Regardless, that means “gumbo weather” is here and we can cook one of our favorite dishes! Gumbo is a quintessential Cajun dish (though some believe it had its origins in Africa). Gumbo is a vital part of Cajun culture and has been enjoyed by people in south Louisiana for nearly 300 years.
You can put just about any meat or seafood in gumbo – shrimp, crawfish, oysters, chicken, duck, beef, venison, smoked sausage and much more. Our version is chicken & sausage, which also happens to be the most popular kind of gumbo in Louisiana. There’s a good reason why – which you’ll find out when you try our recipe!
