Jambalaya
Jambalaya was the first Cajun dish to gain nationwide fame – thanks to the hit song “Jambalaya (On the Bayou)” recorded by country music legend Hank Williams, Sr. in 1952. Hank had good taste, because “jambalaya” not only sounded unique – it was one of the staple foods that represent the Cajun culture which his song was ultimately about.
The origins of jambalaya are believed to come from France and Spain, but there’s no doubt that Cajuns began cooking this dish in the 1700s when they settled in south Louisiana. Jambalaya can feature just about any kind of seafood or meat (the Cajuns used whatever they could catch, hunt or raise). Our version includes a mouthwatering combination of marinated chicken, marinated pork and smoked sausage. C'est bon!
